Easy-peasy Chocolate Pudding
(Makes about 4 cups)
What You’ll Need:

- Fine mesh strainer
- 3 ½ cups (875 mL) unsweetened coconut milk
- ½ cup (125 mL) maple syrup
- 3 tbsp. (45 mL) cornstarch
- ½ cup (125 mL) raw cacao powder
- 1 tbsp (15 mL) pure vanilla extract
INSTRUCTIONS:
1. In a sauce pan, combine coconut milk, maple syrup and cornstarch and whisk well to combine.

2. Bring saucepan to a simmer over medium heat and whisk until mixture is thick enough to coat the back of a spoon (see tips), about 10 minutes.

3. Remove from heat and add cacao powder and vanilla and whisk until smooth.

4. Place fine strainer over a bowl and push pudding through strainer to catch any undissolved cornstarch and cacao powder.
5. Serve immediately or cool to room temperature and refrigerate up to three days.
