I often receive emails about ingredients people see while shopping, wondering ways to use them in their family meals. Recently, one of those ingredients is garlic scapes. The flowering stock of the garlic bulbs can be enjoyed in the same way you would serve green beans or asparagus.
This is a very simple, delicious side dish to be enjoyed while scapes are in season. Your family will love them!
Roasted Garlic Scapes with Lemon and Thyme
(makes 4 servings)
What you’ll need:

- 2 tbsp (30 mL) avocado oil
- 4 cups (1 L) garlic scapes, cut into 2 inch pieces
- 2 sprigs fresh thyme
- ¼ cup (50 mL) fresh lemon juice
- 2 tbsp (30 ml) onion, finely diced
- ¼ tsp (1 mL) sea salt
- ¼ tsp (1 mL) freshly ground black pepper
Instructions:
1. Preheat oven to 350 F.
2. In a large sauté pan, warm oil over medium/high heat.

3. Add garlic scapes and thyme and toss to fully coat in oil.

4. Transfer to a preheated oven and roast until scapes and fork tender, about 15 minutes.

5. Remove pan from oven and discard thyme.
6. Add lemon juice, onion, salt and pepper and toss to incorporate.

7. Transfer to a platter and serve immediately.

- This side dish can accompany fish, chicken and meat.

We actually have some in the house right now to make a pesto with – but you’ve inspired me to get some caramelization going on the outside first, and then I’ll wazz them up!
